Homemade Marshmallow Recipe

Ingredients:

- 3 packets of unflavored gelatin
- 1 ½ cups granulated sugar
- 1 cup light corn syrup
- 1 cup water (divided)
- 1 tablespoon vanilla extract
- ¼ teaspoon salt
- Powdered sugar (for dusting)

Directions:

Prepare Gelatin: In the bowl of a stand mixer, add ½ cup of water and sprinkle the gelatin over it. Let it sit for 5 minutes to bloom.
Make the Syrup: In a saucepan, combine the remaining ½ cup water, sugar, corn syrup, and salt. Heat over medium heat, stirring until the sugar dissolves. Use a candy thermometer and continue heating until the mixture reaches 240°F (115°C).
Mix: With the mixer on low, slowly pour the hot syrup into the bloomed gelatin. Gradually increase the speed to high and beat for 8-10 minutes until thick and fluffy. Add vanilla at the last minute.
Set: Grease a square baking dish and dust it with powdered sugar. Spread the marshmallow mixture evenly in the dish. Smooth the top with a spatula. Let it set for at least 4 hours.
Cut: Dust a surface with powdered sugar, then invert the marshmallows onto it. Cut into squares and dust the sides with more powdered sugar.
